Our Essence
We opened our doors in April 2010, inspired by the taverns, bistros, and trattorias of southern Europe. We were particularly drawn to Mediterranean flavors, which notably influenced us. At the same time, we focused on highlighting everything grown and produced in our country, establishing connections with small producers in Mexico.
This created an integration/fusion of high-quality Mexican products with Mediterranean notes, aromas, and flavors.
Centenario 107 is an extension of your home, your terrace, your garden, open to anyone who wants to relax and be pampered. We create a friendly atmosphere where simplicity, quality and service prevail, we are a cozy restaurant bar in Coyoacan.

Pablo Hernández de Alva
In 2010, he joined the team to become the General Manager and Executive Chef of Centenario 107, where, together with the management team, they developed three spaces within the same place, focusing on pairing good food and drink,with a special emphasis on the Mediterranean diet. He later traveled to Barcelona to complete his master’s studies and rejoined Catering Arcasa as Outlet Manager and Head Chef in April 2015.
In 2017, Pablo made a career shift and moved to Grupo Sagardi, where he was appointed Sous Chef at Oaxaca Cuina Mexicana by Joan Bagur.. After 2 years, he was promoted to head chef, where he was twice awarded the Michelin distinction, “El Plato Michelin,” at After 2 years, he was promoted to Head Chef, where he received the Michelin distinction, “El Plato Michelin,” twice, in 2019 and again in 2020.
In 2022, he decided to take another step in his professional development and turned his attention back to the Middle East, this time at Le Meridien Hotel & Conference Center Dubai, as Head Chef of Bebemos (Spanish Restaurant) and Beef Bistro (French Steak House).

In the last months of 2023 he decided to return to Mexico, with immeasurable joy. immeasurable joy to join the team of Centenario 107 this time with the focus on providing a culinary revolution and offering new gastronomic experiences to the diners.
His return to Mexico is aimed at expanding the culinary and gastronomic range, taking national and international experience, sharing what he learned firsthand from excellent chefs and colleagues, creating new flavor and aroma experiences.. With over 20 years of experience in the hotel and culinary industry, Pablo is extremely passionate and dedicated to creating only the best for his clients. Passionate about creativity and developing new projects from scratch, developing displays, recipes, dishes, space ambiance, and ingredient selection. He is known for being client-oriented and firmly adhering to his Mexican and Catalan heritage.

“Excellent!”
Centenario 107 is a great place to hang out with family or friends. The pizzas are delicious, especially the Margarita or Centenario 107, which we almost always order along with the guacamole with grasshoppers. The place is small but with enough space to be comfortable, and the prices are very affordable.
